This old fashioned cranberry sauce will remind you of Grandma's cooking. The flavor is sweet with a touch of fresh berry tartness. And the added cinnamon and cloves is sure to make this one of your holiday favorites.

Now is the time to prepare your Christmas puddings. This is a traditional English recipe.
Sift together; flour, baking soda, salt, cinnamon, cloves and nutmeg.
Take 1/2 cup of flour mixture and stir into nuts and raisins. Set both aside.
Cream butter until whipped soft. Add sugar a little at a time until mixture is smooth. Beat in eggs vigorously.
Alternately stir in the flour mixture and applesauce.
When all is mixed together, add nuts and raisins and mix well.
Pour batter into greased and lightly floured cake mold. Bake for one hour.
Cool ten minutes then turn out onto cake rack. When completely cool, frost as you'd like and add sprinkles or other festive candies. Or simply add a spoon of whipped cream on each slice.

These roasted chestnuts will make Jack Frost nip at his own nose.
With lightly floured hands, shape the dough into a ball. On a lightly floured board roll dough out to about 1/8 inch thickness. With a sharp knife, cut dough 1 1/2 inch larger than the upside-down 8 to 9 inch pie pan. Gently roll the dough around the rolling pin and transfer onto the pie pan. Unroll, easing the dough into the bottom of the pie pan.
Roll the second crust as you did the first. This time, cut the dough into 1/2 inch wide strips. Pour Cherry filling into the pie pan. Once the filling has been poured into the pie pan, you will weave the strips onto the top of the pie to create a lattice effect.

Add flour and salt. Mix well.
Stir in cherries.
Shape dough into 1 inch balls.
Place 2 inches apart on ungreased sheets.
Bake for 8-10 minutes or until you can see the lower edge is a light golden brown.
Remove from the oven and immediately press a candy kiss into the top of each cookie

White Chocolate Chip Macadamia Cookies
Here's a cookie recipe you'll go "Nuts" over.
In a very large mixing bowl, beat sugar and oil with electric mixer on medium speed. Add eggs and beat well; set aside.
In a large bowl, combine flower, baking soda, salt, cinnamon, and nutmeg.
Alternately add flour mixture and water to sugar mixture beating on low speed after each addition just until combined.
Beat in pumpkin then spoon batter into prepared pans.
Bake in oven at 350° for 55-65 minutes or until a wooden toothpick inserted near center comes out clean. *oven performance may vary so be sure to check on bread occasionally while it’s baking
Cool in pans for 10 minutes then cool completely outside of pans. Wrap and store overnight before slicing.
*Or if you’re like me, throw some butter on it and eat it while it’s warm. Just remember the pans, and bread will be hot.

Here's a cookie recipe you'll go "Nuts" over.
Drizzle foil with a little olive oil or spritz with your favorite cooking spray.
Remove the stems from your mushrooms and arrange them on the baking sheet.
Finely dice your veggies and, with a 1/2 TBSP of butter, saute the celery, onion, and red pepper.
Towards the end, add your chopped mushrooms and garlic, continue to saute until onions and celery are translucent and tender and mushrooms are fully cooked.
Season with old bay, garlic powder, paprika, salt, and pepper, stir, and pour into a mixing bowl.
Add your crab, panko breadcrumbs, and cheese, then mix.
Spoon mixture into mushroom caps and top with a little extra gouda and paprika.
Bake for 15-20 minutes or until mushrooms are tender and stuffing is golden.
Garnish with green onions or parsley for a pop of color + flavor!

Spice Butter Roasted Chestnuts
These roasted chestnuts will make Jack Frost nip at his own nose.
In a separate bowl, whisk together flour, baking soda and salt until well-blended. Set aside.
Using an an electric mixer on medium-high speed, beat the butter and sugars together until light and fluffy, about 2 minutes.
Add in the eggs one at a time, beating in between to incorporate. Add the vanilla, then reduce the speed to low, and slowly add in the dry ingredients. Increase the speed to medium, and continue beating until well-combined.
Fold in the white chocolate chips and cranberries, and mix until just-combined. (Do not overmix.)
Cover and refrigerate dough for at least 1 hour. Then place dough by rounded tablespoons-full onto a baking sheet that has been prepared with parchment paper, at least 2.5-inches apart.
Bake for 10-12 minutes, or until the cookies are lightly golden around the edges.
Remove pan, and transfer the cookies to a cooling rack until cool.
Repeat with remaining dough until all cookies are baked.
Wait until cookies reach room temperature before adding frosting and toppings.
TO MAKE THE FROSTING:
Using an electric mixer on medium speed, beat together the cream cheese and melted white chocolate until combined. (**Be sure that your cream cheese REALLY is at room temperature before adding the white chocolate. Otherwise the chocolate could seize up.)
Add in the vanilla and mix until combined. Then reduce speed to low and add the powdered sugar.
Mix until incorporated. Then use a rubber spatula to scrape down the sides of the bowl, and beat once more for 1 minute on medium speed until the frosting is smooth. You can add more powdered sugar for a thicker frosting.
Spread the frosting on the cooled cookies. Then immediately sprinkle the frosted cookies with the chopped dried cranberries. And use a fork to drizzle on the frosting, swishing it back and forth over the cookies.

White Chocolate Chip Macadamia Cookies
Here's a cookie recipe you'll go "Nuts" over.
16 ounces dried figs 1 3/4 cups milk 1 1/2 cups all-purpose flour 1 cup sugar 2 1/2 teaspoons baking powder 1 teaspoon ground nutmeg 1 teaspoon ground cinnamon 1 teaspoon salt 3 eggs 1/2 cup melted butter 1 1/2 cups breadcrumbs 1 tablespoon grated orange peel
Preheat oven to 350 degrees F. In a a medium saucepan, heat milk and chopped figs over medium-low heat but do NOT bring to a boil. Cook for 10-15 minutes stirring occasionally. The milk will soften the figs. In a medium bowl mix flour, sugar, baking powder, nutmeg, cinnamon, and salt. In a large bowl, beat eggs one minute on high. Reduce speed to low and add butter, bread crumbs, orange peel, and warm fig mixture. Slowly incorporate flour mixture. Beat until just blended. Pour the mix into the greased bundt pan. Level top as much as possible. Cover the mold with a piece of aluminum foil greased on one side, greased side down. Place the mold in a roasting pan and place on oven rack. fIll with hot tap water 2 inches up the side of the mold. Bake for 2 hours or until the pudding is firm and it is pulling away from the side of the bundt pan. Remove the pudding from the water bath. Remove the foil and cool on a wire rack for 10 minutes before unmolding. Invert bundt pan onto a serving plate and remove mold. It should come away easily. Serve with a hard sauce. Chef James Thomas

Prepare pie crust by mixing the flour and slt. Cut shortening into the flour (will resemble cornmeal); add cold water 1 tablespoon at a time. Mix dough and repeat until the dough is moist.
With lightly floured hands, shape the dough into a ball. On a lightly floured board roll dough out to about 1/8 inch thickness. With a sharp knife, cut dough 1 1/2 inch larger than the upside-down 8 to 9 inch pie pan. Gently roll the dough around the rolling pin and transfer onto the pie pan. Unroll, easing the dough into the bottom of the pie pan. Bake for 10 minutes and set aside to cool.
In a large bowl, beat pumpkin with evaporated milk, eggs, brown sugar, cinnamon, ginger, nutmeg and salt with an electric mixer. Mix well. Pour into prepared pie crust. Bake for 40 minutes or until the knife (inserted 1 inch inward from the crust edge) comes out clean.

Now is the time to prepare your Christmas puddings. This is a traditional English recipe.
When ready to assemble, bring olives and cheese to room temperature for about 15 minutes to melt the olive oil which will have solidified in the fridge, and add the tomatoes. Stir or shake to completely cover them in the marinade.
Thread an olive, a tomato and piece of cheese onto skewers, with the cheese on the bottom so they'll stand upright, or offer separately in three bowls, with tooth picks on the side.
These may be served right away, or kept in the fridge until ready. Again, allow to sit at room temperature for about 15 minutes because olive oil solidifies when refrigerated.

Broil with tops about 6 inches from heat 12 to 16 minutes, turning once, until bacon is crisp.
Meanwhile, in 1-quart saucepan, mix remaining ingredients. Cook over medium heat about 5 minutes, stirring frequently, until sugar is dissolved and mixture is bubbly.
Heat oven to 350°F. Transfer sausages from broiler pan to baking dish. Pour sauce over sausages; turn to coat with sauce.

Here's a cookie recipe you'll go "Nuts" over.
Pour popped popcorn into two very large mixing bowls, set aside.
In a large saucepan whisk together sugar, half and half, corn syrup and salt. Cook over medium high heat, stirring constantly until sugar has dissolved.
Heat mixture to 232 degrees, stirring occasionally. Immediately remove from heat and pour in vanilla and food coloring. Drizzle mixture over popped popcorn.
Gently stir popcorn until mixture is evenly coated and coating begins to dry (you'll notice the popcorn kernels separating).
Pour mixture onto waxed paper and allow to dry for about 20 minutes. Store in an airtight container

Combine all ingredients except the kisses in a bowl. Mix and form small balls using rounded teaspoons for each. Roll balls in granulated sugar and place on ungreased cookie sheet. 1 1/2 tablespoons crushed peppermint 1 teaspoon corn syrup 1/2 cup sugar 1/2 cup unsweetened cocoa powder Pinch of salt 1/3 cup boilIng water 3 cups milk 3/4 cup half n half 1/4 teaspoon peppermint extract Whipped cream 4 medium size candy canes
Using a clean finger run the rim of each mug with a small amount of corn syrup. Place crushed peppermint on plate. Press rim of each glass into crushed peppermint. In large saucepan combine sugar, cocoa and pinch of salt. Add boiling water. Turn heat on to low and bring to simmer; stirring constantly. Simmer for 2-3 minutes; stirring constantly. Add milk and half n half. Stir to combine and simmer until warm; stirring frequently. Remove from heat and stir in mint extract, Split between 4 mugs and top with whipped cream. In a separate bowl sift dry ingredients together
Combine dry ingredients to Pumpkin mixture, don’t over mix
Grease and line bottom and sides of 10.75 x 15.25 cookie sheet with parchment paper
Spread pumpkin mixture into pan and bake at 350 for 15 min.
Let pumpkin cool till pan is just cool enough to the touch.

Spice Butter Roasted Chestnuts
These roasted chestnuts will make Jack Frost nip at his own nose.
Mix together.
Sift sugar, salt, flour, baking powder.
Cut in shortening until particles cling together.
Mix egg mixture with dry ingredients until soft dough is formed.
Add more flour if needed to handle.
Roll in to the size of walnuts and put on greased cookie sheet.
Bake at 350 for 15 mins.
Let stand until cool, then frost.
Frosting for Snow Balls:
1 1/2 cup granulated sugar
1/2 cup water
2 eggs whites
1/4 tsp cream tarter
1 box confectioners sugar almond and vanilla flavoring
Boil sugar and water for 2 minutes and cool.
Beat egg whites with cream tartar until it forms soft peaks, gradually add boiled sugar, beat for 3 minutes.
Add confectioners sugar and flavoring.
Roll cookies in frosting a dozen at at time.
Lay flat to dry.
Makes about 100 cookies.

Here's a cookie recipe you'll go "Nuts" over.
Using a sharp knife score an X on the rounded top of the chestnuts. Cutting through the shell but not deep into the nut.
Once you have cut all the nuts soak them in a bowl of super hot water for 2 minutes.
Lay out a large piece of foil onto a rimmed baking sheet. Gather up the edges to make a little wall.
Place the chestnuts (flat side down, X side up) inside the foil. Try not to overlap.
Add melted butter and spices in a bowl and mix to combine.
Pour over chestnuts and roast for about 30 minutes until the shells are curved back and the meaty flesh is exposed.
Peel while still warm and dip in butter sauce.

Preheat oven to 325°F. Meanwhile, quickly shape dough into 1-inch balls, and space them 2 inches apart on ungreased baking sheets. Make a deep thumbprint in the center of each; fill with preferred jam or chocolate.
Bake for 15 minutes, or until cookies are the color of pale sand. Transfer to wire cooling racks.

White Chocolate Chip Macadamia Cookies
Here's a cookie recipe you'll go "Nuts" over.
Mix in the fruit, mixed peel, nuts, chopped apple then the zest.
In a new bowl beat the eggs and add the stout and rum. Add to the dry ingredients, and stir VERY well ( it is best to use a very large bowl).
Cover the bowl and leave overnight.
Grease 2, 2 pint pudding basins and pack the mixture into them.
Cover with greasproof paper and pudding cloths, tied on with string.
Steam for 8 hours. Cool, and store in a dark, cool, dry cupboard.
To reheat for eating, steam for 2 hours
Serve with..
Cumberland Rum Butter
6 oz unsalted butter
6oz soft dark brown sugar
6 tablespoons dark rum
Blend butter and sugar, add rum slowly, and mix well.
Pack into moulds for serving and chill. Remove from 'fridge just before serving.
