When the elves start gathering for their December celebrations, these bright, cheerful pinwheels are always the first tray to empty. With creamy filling, soft tortillas, and the classic red-and-green Christmas colors, they bring instant holiday cheer to any table. They are simple to make, easy to slice, and perfect for feeding a crowd during the busiest time of year.
4 large flour tortillas
8 oz cream cheese, softened
½ cup finely chopped fresh spinach
½ cup finely diced roasted red peppers (patted dry)
1 cup shredded mozzarella or Monterey Jack cheese
¼ teaspoon garlic powder
¼ teaspoon onion powder
Salt and pepper to taste
In a medium bowl, mix together the softened cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper until smooth.
Stir in the chopped spinach and roasted red peppers until evenly distributed.
Lay a tortilla flat and spread a generous, even layer of the filling across the surface.
Starting from one end, roll the tortilla tightly into a log.
Wrap tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
Slice into ½-inch thick pinwheels and arrange on a platter.
Keep chilled until serving.
Slice off the ends of the roll for the cleanest presentation.
If your filling feels soft, chill longer for easier slicing.
Serve on a white platter to make the Christmas colors pop.
Ranch Pinwheels: Add 1 tablespoon ranch seasoning mix.
Turkey Pinwheels: Add thinly sliced deli turkey before rolling.
Spicy Pinwheels: Add chopped jalapeños or a dash of hot sauce to the filling.
